Grit selection is what determines both the result and how long the job takes. Coarse grits remove material quickly but leave scratches that then have to be sanded out, so working down through the grades in steps is faster overall than trying to jump straight to a fine finish. On paintwork, skipping grades is the usual cause of sanding marks appearing under a fresh coat.
Wet sanding cuts cleaner and keeps the paper from clogging on filler and paint, and a fresh abrasive always cuts faster than a worn one.
